I would LOVE to have your favorite recipes for simple, one pot meals. Just the things you can make in a pot or a pan and just have a simple green salad along side.......-Peaz

Peaz, honey-bunches, I don't really have a written recipe for this one, but I promise it's a keeper. Buy your favorite roast cut, but don't spend a fortune, just get a good cut of meat with not too much fat, it's going in the crockpot and will simmer on low all day long. Prep your meat with a generous slathering of dijon mustard and then coat in seasoned flour (salt, pepper, garlic powder and other spices you like). Once it is dredged thoroughly, place the meat in a frying pan that has about three tablespoons of olive oil. Brown your meat on all sides and removing the meat from the pan, place it into the heating crock pot. Save the oil from the frying pan, adding a couple tablespoons of leftover seasoned flour, brown and allow to make a nice roux base. Take a cup of hot water and add to the base. Toss in a thinly sliced medium yellow onion. Cook the onion and broth down until it is a thick gravy. Pour this onto the meat in the crock pot. Add a couple quartered potatoes and a couple halved carrots to the pot and cover. The dijon mustard is the key. Don't use regular mustard! Enjoy. Oh.....I am into reading food blogs. If you'd like a few to view for ideas, just holler. I have to admit though, my expertise is mainly the sugar, butter, flour arena.

Hey Peaz, I'm thinking casserole type dishes. This one isn't a one pot recipe because you have to brown the meat in a skillet, but it is easy to make. About 6 servings Hearty Meat Pie 1 package (8 rolls) refrigerated crescent rolls 1 lb. lean ground beef 1 medium onion - diced 1 can (12 oz) beef or mushroom gravy 1 box (10 oz) frozen green peas (or other veggie) - thawed 1/2 C shredded Swiss cheese 6 slices tomato Preheat oven to 350F. Unroll dough and separate. Spread to cover bottom of ungreased 9" pie pan. Press together to form a crust. Bake 10 minutes. Meanwhile, in a skillet, brown beef with onion. Drain. Stir in gravy and peas. Cook until heated through. Pour mixture into pie pan. Sprinkle with cheese. Bake 10 - 15 minutes or until crust is browned and cheese is melted. Arrange tomato slices on top of pie and bake 2 minutes more. Serve.

As long as I'm talking meat pies, here's another one. It's a bit more involved to make, but I really like it. Spinach Beef Spaghetti Pie 6 to 8 servings 6 oz uncooked angel hair pasta 2 eggs - lightly beaten 1/3 C grated parmesan cheese 1 lb. lean ground beef 1/3 C chopped onion 1/4 C chopped green pepper 1 jar meatless spaghetti sauce 1 tsp. Creole seasoning 1/2 tsp dried basil 1/2 tsp dried oregano 1 package (8 oz) cream cheese - softened 1 package frozen chopped spinach - thawed and squeezed dry 1/2 C mozzarella cheese Cook pasta according to directions. Drain. Combine pasta, eggs, and parmesan cheese. Press pasta mixture into bottom and sides of a 9" diameter, deep dish pie plate. Bake at 350F for 10 minutes. Meanwhile, in a skillet, cook beef, onion, and green pepper until meat is no longer pink and vegetables are tender. Drain. Stir in spaghetti sauce and seasonings. Bring to boil, cover, reduce heat and simmer 10 minutes. Between two pieces of wax paper, roll out cream cheese into a 7" circle. Place in pasta crust. Top with spinach and meat sauce. Sprinkle with mozzarella. Bake ate 350F 20 to 30 minutes or until set. Serve.

not even sure this one fits the category, but: you need: 13X9 glass casserole dish take two (maybe 3) kinda softened philly cream cheeses and spread this into the dish cover cream cheese with your favorite chili--I use canned because I am lazy sprinkle with grated cheese. We like sharp cheddar, colby, whatever you got nuke for a minute or so, you'll be able to tell when it's hot big bag of white corn chips/nachos to scoop it up with this is great for sundays watching sports on tv, or any get-together with friends because it's quick and easy, and yummy.

Aloys - made your Hearty Meat Pie! Just perfect for a cold, icy night. Thank you so much - this is definitely a keeper recipe. Will try your other one soon. Dear Coffs! Believe it or not, I don't have a slow cooker! I will get one. I may have mentioned this before here on the forum at some point, but after my dad retired, a zillion years ago, my mom suggested he get a hobby. Well, his hobby turned out to be cooking. Well, what he considered to be "cooking"! He fell in love with his CROCKPOT - they had just come out at the time. Oh, Lordy, did he create some scary things in it. His repertoire consisted of about 2 things: spaghetti sauce, and something he called "Swiss Steak". My sister and I still giggle over the fact that Daddy could buy a HUGE HUNK OF MEAT - about 5 pounds of it - for about $5 bucks. The reason was, of course, that it was ALL FAT. Gross! Well, he put that sucker in his CROCKPOT and threw a bunch of other stuff in there and let it cook away all day long. When mom and us sisters got home, that piece of meat had shrunk down to nothing and the CROCKPOT was full of fatty gravy-stuff. He proudly ladled it out...... Finally, one day, my mom "accidentally" knocked his beloved pot off the counter and onto the floor, where it broke. Of course, he went out and bought another one the next day...... Anyway, I will try the slow-cooker thing. Bless my Daddy's dear heart - he passed away back in 1992. He was darn proud of his culinary abilities! Love, Peaz

Enchilada Casserole 4 (10 inch) whole grain tortillas 1 1/2 pounds lean ground beef 1 onion, chopped 2 cloves garlic, minced 1 (10 ounce) can tomato sauce (tomato soup works) 2 (10 ounce) cans enchilada sauce 1 small can of green chilies 1 can black beans 1 teaspoon ground cumin 4 teaspoons chili powder salt to taste 2 cups shredded Cheddar cheese (I use as much as seems reasonable on that day!) DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a deep dish pie plate; set aside. 2. In a large non-stick skillet over medium heat, lightly toast the tortillas. 3. Brown the ground beef and onion until beef is no longer pink; add garlic. 4. Stir in the tomato sauce, enchilada sauce, green chilies, black beans, cumin, chili powder and salt to taste. Mix well and allow to thicken slightly. 5. Spoon a thin layer of the beef mixture onto the bottom of the pie plate. Begin layering the tortilla, beef mixture, then cheese, ending with a final layer of cheese on the top. 6. Bake in the preheated oven for 30 minutes, or until cheese is melted and lightly browned.

crock pot beef one beef roast one can condenced tomato soup one can cream of mushroom soup one package oinon soup mix mix the tomato and mushroom soup together and pour over the roast. (in the crock pot) sprinkle the onion soup mix over the top. turn on low heat. go to work come home and it's done. it makes a nice gravy, that you can (or not) thicken and pour over rice or buttered egg noodles.

We'll how many "one pot meal" recipe do you wish. I cook everyday for our employees (5-6 men). I use my crockpots ALOT!! Here's a favorite of the guys. If you wish more feel free to PM and I'd be more than happy to email some recipes which I use on a weekly basis. Enjoy!! SEAFOOD ENCHILADAS ½ Onion, chopped 1 tbl. Butter ½ lb – 1 lb imitation crab meat, chopped ½ lb salad shrimp 8 oz. Colby cheese or Mexican blend 1 pkg. Cream cheese, softened 2 cup half-and-half cream 1 cup sour cream ½ cup butter, melted 3 tsp. parsley 1 tsp. garlic salt 1/2 cup salsa 1 can Rotel tomatoes w/chiles Black olives 6 (10”) flour tortillas Preheat oven to 350 F. Saute onions in butter until transparent. Remove from heat and stir together crab, shrimp, 1 cup cheese, cream cheese and half chopped up black olives. Place large spoonful of the mixture into each tortilla. Roll tortillas up and place seam side down in 9x13 baking dish. Mix together in microwave safe bowl half-and-half, butter, parsley, garlic salt, salsa, Rotel tomatoes and warm to blend. Pour over the top of the enchiladas. Top with remaining cheese and black olives. Bake for 45-55 mintues, until bubbly. Will probably have extra sauce. I add shrimp, crab shredded cheese and heat in oven for a dip. Or just eat it straight.
