What breed of grouper is it they serve in the restaurants in Akumal? Is it Black Grouper or something else?

Very doubtful that they would know the species unless they caught it themselves. There is also a very good possibility that some are serving something other than grouper, but calling it grouper. I don't want to say that that would necessarily be because they are being deceitful, but if they are buying fileted fish from a market, it's pretty tough to tell the difference between grouper and quite a few other white fleshed fish. Trigger fish are commonly sold as grouper (although personally I actually like trigger fish MORE than grouper, but that's just me).

If it's local, it very well could be black grouper. As Caribbean grouper are basically endangered from over fishing, many restaurants serve Pacific grouper, as it's more plentiful.

The Mexican concept of grouper is if it was in a group when it was caught, it's grouper! Not much different than calling most of the rockfish caught off the coast near me is sometimes called snapper. Snapper is common near Florida, not in the Pacific.

Not to be confused with what is called rockfish in the Chesapeake Bay region, but which everyone else calls striped bass, and which I call the tastiest fish of all ... except for maybe grouper.

In Mexico grouper is called "mero".

And they usually refer to black groupers as "negrillos."

Thanks for the replies. I ask because when I go to Florida to visit my parents, all the grouper at the market is Black Grouper. But unlike the nice portion-sized fillets that you get at the restaurants in Akumal and the RM, it's a big gnarly chunk off of some huge fillet. IMO it's not as good.

I assume whatever they're serving me in Akumal is Grouper. Whatever it is, everyone is serving the same fish and calling it Grouper. I usually get it once a day when I'm there because we have nothing like it here in the Pacific Northwest.

FWIW, I had Yellow-Tail Snapper when I was just in Florida and thought it was decent.

I also have the grilled "whatever it is" fillet con ajo daily in Akumal. It usually tastes like Grouper or Snapper although the menu rarely specifies. I just take whatever they give me and it is always delicious.
