I am in LOVE with the chicken from the pueblo. Its grilled flat in those metal grills!!! Does anyone know what the combination of spices are that they use to give it the distinctive flavor?? I want to bring some home and try to somehow duplicate that aromatic delicious chicken!!

I think they use achiote on the chicken. I've only seen it in a paste. Recipes I've been told marinate the chicken with achiote paste, some lime juice, a few different spices and some olive oil. I've tried making "flat chicken" at home, and it's just not the same. The combo of seasoning, whatever they're cooking it over, and just being in Mexico, you just can't duplicate it (but you can have tasty fun trying)

There's a place in Cozumel that makes amazing achiote grilled fish. They coat it, squeeze on some lime and wrap it in a banana leaf then toss it on the grill. Served with side of rice and black beans. It is soooo good!

You can get Achiote in little boxes in the grocery stores ... mix it with lime juice to make the paste. Fabulous! Glad you've enjoyed one of the best Akumal has to offer!

We've been playing with this recipe for awhile and we really enjoy it. It involves more of a tangy, citrus-y taste. The achiote is incorporated into the marinade, as many folks can't deal with the intensity of an achiote rub. Not really spicy, but it is different. I do think it is a bit of an acquired taste. As usual, serve with warm tortillas, pinto beans, maybe some red rice and homemade pico de gallo. This marinade also works REALLY well with grilled pork tenderloins!!!   Achiote Citrus Marinade 6 oz. pineapple juice (one small can) 6 oz. orange juice 3 oz. lime juice (3 limes) 1 or 2 seeded (or not) jalapenos 1 or 2 garlic cloves 2 tbsp. prepared achiote paste (or to taste - I usually use 1/2 of a brick) 2 tbsp. olive oil 1 or 2 chickens, cut up or flattened - Put everything (except the chicken ) in the blender and mix until peppers and achiote are incorporated. - Place chicken in large Ziploc bag, add marinade and refrigerate for 24 hours (at LEAST 12 hours is recommended). Flip bag over once in a while. - Remove from refrigerator 30 minutes before cooking, grill as usual. We also found these directions on the internet for flattening a chicken - pretty straightforward. Flattening A Chicken 1. Lay the whole chicken breast side down on your cutting board. 2. Feel around his (or her) back until you feel the backbone running straight down the middle. It should be straight down the center of the back. 3. Using kitchen shears or a knife, cut down both sides of the backbone. The bones are pretty thin in this area, so you should be able to cut through with little effort. 4. Remove the backbone completely and trim off any excess fat around where the tail used to be. 5. Ok, here’s where it’s a little tricky the first time. Spread the chicken open and locate the white piece of gristle. Cut through it with the knife. 6. There is a bone starting under that piece of gristle called the keel bone and it runs down the length of the breasts. If you bend the chicken back a little farther, you’ll start to see the keel bone poke out between the breasts. 7. Work your fingers down each side of the keel bone to loosen and then pull it out. 8. Now you can either leave the chicken flat or cut all the way through where the keel bone used to be to form two half chickens. So lucky here in Tejas. We have the chicken shacks. They don't cook them flat, but the seasoning is the same.

Get some Mojo Crillo or Naranja Agria (Sour Orange) marinades and mix one or the other with the achiote paste. Marinate the chicken for about an hour and you're are good to go. My wife bought me a grill press for Christmas so no more bricks covered in aluminum foil! We are fortunate to have a Mexican Supermarket, Mi Pueblo near us. It is just like going to the store in the Yucatan. The produce is so much better we stopped shopping at Saffeway. I'll post some pics of this place, unless you've been to one it's hard to get the right idea.

Thanks to all! Very excited to get all the ingredients and give it a whirl....we have had a great first trip despite a few bumps....today we had our snorkels and fins stolen from the back of out golf cart while we were at the midway market getting chips....add that to the urchin incident the two Pemex rip offs and it's been experientially exciting.....but pulling into the driveway of my beautiful villa literally takes the sting out of it all! Plus the chicken lady t the peublo literally hugs us when we order 5 chickens (skip the sides!)!! It's all good

You indeed have a great attitude, and I think you're well suited for vacationing in Mexico. My first trip I was really sick for 3 days. 20-some years of many trips, I don't have enough fingers to count the times things went bad, one of us needed to seek medical attention, came hme with an injury or illness, etc., etc. But we never think of those things when we think of Q.Roo and the places we love to go. It's become a part of our soul and who we are. Stuff happens no matter where you are (I know first hand...) If you have all those less than great things to deal with and you are still lovin your vacation, then you have found a place you will come back to many more times.... and this stuff will not happen every time.

Today i went to the market in NJ (where it is 30 degrees and gray) and got the butcher to flatten the chicken. Made the marinade and grilled it for dinner!! Akumal meets NJ (almost!!) Miss that place!
