Just as the title says, what are some easy recipes me and the wifey can make in our condo? Breakfast, lunch,dinner, anything. :)

Here's some of our favorites when staying "off the reservation"...  Breakfast: 1) Huevos Revoltos (old family hunting camp recipe ). Saute up some onions, sliced bell peppers, seeded & sliced jalapenos and anything else that sounds good or can be easily captured. Scramble up some eggs, add the previous mixture, any leftover diced meat (pollo, carnitas, pavo, res, Spam...) from the night(s) before. Wrap in warmed flour tortillas along with some queso fresco and serve with salsa or home-made pico de gallo as well as fresh pineapple, papaya and any other fruit you can find at the Akumal Farmer's market on Saturdays and Wednesdays (I think). 2) Loncheria breakfast (even a favorite at home). Fry and drain well some crumbled chorizo, heat up a can of La Costena refried black or regular beans, and warm some corn tortillas. Smear a layer of beans on the warm tortillas sprinkle on some chorizo and queso fresco, top with an egg fried to your liking and some salsa verde o rojo. Serve with the requisite fruit medley mentioned above. 3) Take a morning off and head over to Turtle Bay Bakery for the "Ex-Pat" breakfast and a cinnamon roll, or hit the Loncheria Akumalito for their breakfast chilaquiles. They pick them when they're ripe!!! Sure beats the hell out of our bland, pithy, U.S. supermarket tomatoes, peaches, melons, etc.   As you can see from the pictures, we go through a lot of corn (our preference over flour) tortillas - at home as well as in Mexico. But for some reason, Tortillas de maiz are hard to find in the Akumal & PA stores. However, we found that the Loncheria Akumalito would sell us 2 dozen for $10p. Snow(will cater for airfare)bound

For our November trip to Mi Casa Del Mar, we dropped around $3,000p at Soriana.   Chicken pieces, a bottle of tequila, steaks, beer, sliced deli meats & cheese, a bottle of vodka, chorizo, beer, eggs, canned frijoles, a few bottles of wine (OK, several), tortilla chips, ground coffee, assorted tetra boxes of salsa, beer, flour tortillas, long-lasting fruits & veggies like onions, garlic heads potatoes, pineapples, a few roma tomatoes, several tetra boxes of fruit juices, a big bag of limes, beer and whatever else looks tasty for a ten-day stay. Beware, the panaderia at Soriana is extremely hard to resist!!! When we get to the condo, we freeze half the fresh meats (and thaw them as needed the 2nd half of the trip) and hit the Farmer's Market both days it's open for fresh fruits & vegetables. There's also a couple of Super-Minis along the HMB road for safe ice (hielo purificado) and more beer and wine if you run low...   Oh, and as several of you already know - I bring my cooking "stuff": Snow(luggage PLUS groceries, we're gonna need a bigger van)bound
