Here is a movie that shows how to make conchinita pibil. The instructions start at the 4:30 mark. I thought the block of achiote paste was quite interesting. Anybody ever see it in a block before?

Yeah, that's how most of it is sold in tiendas here in the US.

I didn't watch the video but I have always used the brick of achiote. I just bought some of the pre-mixed liquid and am going to try it.

Have always bought it in the brick. I buy smaller ones than what I saw on the video but I have seen the large ones down there too.

We bought the brick at the fruiteria in Tulum pueblo. Not sure which one, but did notice most of them carried it. A little goes a long way..

we bought it at the farmer's market near the basketball court in Akumal...one of the vendors had some blocks under their table.
