These recipes were given to me by Patti, the maid at Villa Palmeras in Akumal, Mexico. I have made the first two and they are wonderful. I have not had the courage to make the Habanera one yet. My family loves the Green and Red Salsas. Enjoy! Green Salsa ingredients: 4 Tomatillos 1 Avocado Cilantro Garlic 1 pod Onion (1/2 of a white Onion) Small amount of water One Jalapeno seeded and veined (Optional) Sea Salt, to your taste Blend in a blender. Makes enough for 4 to 6 adults Red Salsa ingredients: 2 or 3 tomatoes depending on size Onion (1/2 of a white Onion) Cilantro Water, small amount quality olive oil, approximately 2 tablespoons small amount of water Blend in a blender then cook for 10 minutes on the stove, let it come to room temperature and serve Habanera Salsa 3 Habanera peppers, seeded and veined lime juice of one lime salt Cook Habaneras over open flame a little bit, (Asado Pokito) Blend grilled Habaneras, juice and salt
